Salad Creations doesn’t just have a look, it has a sound—frequent
cheers from the crew.
“When someone drops a tip in the tip jar, someone yells,
‘Can I get a thank you?’ and the crew responds with a loud, ‘Thank
you!’” Owens explains. The crew also cheers when a guest earns
a free salad with the frequent visitor card.
Another constant sound is the loud, high-energy chopping with double-headed
pizza cutters in stainless steel bowls. (Ninety-five percent of customers
choose to have their salads chopped, Levine says.)
Salad Creations Radio adds to the ambience with a custom mix of music
and promotional messages.
“There are reminders for guests, like when you buy eight salads,
the ninth one is free,” Owens says. “There are messages for
the crew prior to opening, like to check your uniform or make sure the
windows are clean.”

The clever use of audio messages is no surprise here. The company has
proven itself an innovator in analyzing and influencing behavior. Salad
Creations was named QSR’s 2006 Best Overall Program in HR
for its use of behavioral science in hiring and identifying potentially
successful area developers. Levine credits the program, led by vice president
of operational psychology David Glowatzki, with reducing turnover and creating
a positive atmosphere.
Why
it bears watching: The Salad Creations team is worth watching
in part simply for entertainment. Crewmember personalities are expected
to be as colorful as the chef’s hats they wear.
“We’re really focused on the psychological component of hospitality.
We hire people who will make our customers smile. And we believe if you
look sharp, you have a better chance of being sharp,” Owens says.
(The hats are so popular that Salad Creations is now selling them to customers
along with the salad mixing bowls and choppers.)
But this is more than off-the-cuff entertainment; each Salad Creations
store is a reflection of Levine’s carefully crafted formula of quality
food, atmosphere, and complementary personalities. He believes showing
customers a good time is as important as giving them a good meal. In the
case of salads, it might be more important. Salad Creations provides a
good, consistent product, but Levine is banking on the total experience
to set his brand apart from the competition.
Aggressive growth plans include 55 stores open by this year’s
end and 5,000 units open in 10 years. Serving roughly 300 people at each
location between 11 a.m. and 8 p.m., Levine projects 2007 revenue to exceed
$14 million.
